Co-founded by Oglala Lakota Sean Sherman and Mdewakanton Dakota/Wahpeton Sisseton Dana Thompson, the Indigenous Food Lab is a restaurant, education, and training center. The sole purpose is to function as the foundation of the North American Traditional Food Systems’ (NATIFS) efforts towards establishing a new Indigenous food system into tribal communities and aims to focus on the reintegration of traditional foods. The Indigenous Food Lab is Phase 1 of 3 in achieving NATIFS ultimate goal. The Indigenous Food Lab, a culinary training center, will be established in the Twin Cities area of Minnesota in 2020. This project will feature an Indigenous restaurant to teach food service skills, a native foodways classroom, and research and development to create more curriculum and educational resources such as Indigenous food identification, gathering, cultivation, and preparation. The Indigenous Food Lab will serve tribal communities across North America in helping create greater access to regional Indigenous foods and increasing the number of satellite Indigenous kitchens.
